Skillet Chicken in Creamy Sun Dried Tomato Sauce Serves 4 @ 4 pts/serving 1 lbs boneless, skinless chicken breast 1 tbsp butter 3 tsp minced garlic 2 tsp Italian seasoning ½ cup julienned sun dried tomatoes, I used dried from a package 1 cup chicken broth ½ cup low fat half and half 2/3 cup shredded parmesan cheese Salt and pepper to taste Fresh thyme or basil, optional ¼ cup grated parmesan cheese for topping (optional, not included in points ) In large skillet over medium heat, melt butter. Season chicken with salt and pepper; cook for 5-7 minutes per side or until browned and cooked through. Remove from heat Add garlic, Italian seasoning, sun dried tomatoes, chicken broth, half and half and 2/3 cup parmesan cheese to the pan and stir to combine.
