White Bean “Alfredo” Sauce - 2 pts/ serving


White Bean “Alfredo” Sauce

2 pts/ serving. Serves 4 approx. 1/3 cup servings.


1 can (15oz) white beans, drained and rinsed
1-2 cloves garlic, to taste, minced
1/2 – 1 tbsp Shallot, to taste, finely chopped
¾ cup skim milk
3 tbsp grated parmesan cheese
2/3 tbsp (approx. 9 gms) Kerrygold Pure Irish Butter
Salt, to taste
Pepper, to taste
Basil, fresh or dried, to taste

  1. Combine beans and skim milk in blender and liquefy
  2. Heat butter in a sauce pan over medium heat
  3. Sauté shallot until translucent
  4. Add garlic and sauté until fragrant, about 30 seconds
  5. Add the white bean mix to pan
  6. Stir in parmesan cheese, salt, pepper and basil
  7. Simmer, stirring frequently, until the parmesan cheese is melted in

Note:
  1. To guaranty the portion make sure to measure how much the full batch is and divide by 4.
