White Bean “Alfredo” Sauce - 2 pts/ serving
White Bean “Alfredo” Sauce
2 pts/ serving. Serves 4 approx. 1/3 cup servings.
1 can (15oz) white beans, drained and rinsed
1-2 cloves garlic, to taste, minced1/2 – 1 tbsp Shallot, to taste, finely chopped
¾ cup skim milk
3 tbsp grated parmesan cheese
2/3 tbsp (approx. 9 gms) Kerrygold Pure Irish Butter
Salt, to taste
Pepper, to taste
Basil, fresh or dried, to taste
- Combine beans and skim milk in blender and liquefy
- Heat butter in a sauce pan over medium heat
- Sauté shallot until translucent
- Add garlic and sauté until fragrant, about 30 seconds
- Add the white bean mix to pan
- Stir in parmesan cheese, salt, pepper and basil
- Simmer, stirring frequently, until the parmesan cheese is melted in
Note:
- To guaranty the portion make sure to measure how much the full batch is and divide by 4.
