Blackened Shrimp Stroganoff
Serves 4 @ 4pts/serving
1 lbs peeled shrimp
Cooking Spray1 tbsp Cajun seasoning
1 tbsp butter
3 cups sliced mushrooms
1 tbsp chopped shallots
1 – 2 Cloves garlic, diced
½ Onion, cut into strips
2/3 cups chicken broth
½ cup light sour cream
1 tbsp cornstarch
1 cup chicken broth
1 7oz jar roasted red peppers in water
1 tbsp drained capers
- Spray peeled shrimp with cooking spray and combine with Cajun seasoning in a medium bowl. Set aside
- Melt butter over medium heat in a large frying pan. Cook mushrooms, onions, garlic and shallots until onions are tender. Remove from pan
- Add shrimp and cook until pink, about 2 – 3 minutes. Remove from pan.
- Add 2/3 cup chicken broth to pan, bring to a boil. Cook for approx. 2-3 minutes, or until reduced to about ¼ cup.
- While chicken broth is reducing, in a small bowl combine sour cream and cornstarch. Mix in 1 cup chicken broth
- Stir into reduced chicken broth in the pan. Cook until thick and bubbly, stirring occasionally. Cook 1 minute more
- Stir in shrimp, mushrooms, roasted red peppers and capers. Heat through and season with salt and pepper to taste.
- Serve over pasta, not included in point total
