Blackened Shrimp Stroganoff

Serves 4 @ 4pts/serving

1 lbs peeled shrimp
Cooking Spray
1 tbsp Cajun seasoning
1 tbsp butter
3 cups sliced mushrooms
1 tbsp chopped shallots
1 – 2 Cloves garlic, diced
½ Onion, cut into strips
2/3 cups chicken broth
½ cup light sour cream
1 tbsp cornstarch
1 cup chicken broth
1 7oz jar roasted red peppers in water
1 tbsp drained capers

  1. Spray peeled shrimp with cooking spray and combine with Cajun seasoning in a medium bowl. Set aside
  2. Melt butter over medium heat in a large frying pan. Cook mushrooms, onions, garlic and shallots until onions are tender. Remove from pan
  3. Add shrimp and cook until pink, about 2 – 3 minutes. Remove from pan.
  4. Add 2/3 cup chicken broth to pan, bring to a boil. Cook for approx. 2-3 minutes, or until reduced to about ¼ cup.
  5. While chicken broth is reducing, in a small bowl combine sour cream and cornstarch. Mix in 1 cup chicken broth
  6. Stir into reduced chicken broth in the pan. Cook until thick and bubbly, stirring occasionally. Cook 1 minute more
  7. Stir in shrimp, mushrooms, roasted red peppers and capers. Heat through and season with salt and pepper to taste.
  8. Serve over pasta, not included in point total
