Ginger Veggie Stir Fry

4 servings @ 1 pts each


1 tbsp cornstarch
1 ½ cloves garlic, crushed
1 tbsp. fresh ginger root, minced
1 small head of broccoli, cut into florets
½ cup snow peas
¾ cup julienned carrots
¼ cup chopped onion
2 tbsp soy sauce
2 ½ tbsp. water
½ tbsp. salt
1 tsp sesame oil
1 tsp sunflower oil
Cooking Spray

  1. In large bowl blend cornstarch, garlic, ½ tbsp. ginger, and oils until cornstarch is dissolved, add some water if needed
  2. Mix in veggies tossing to lightly coat.
  3. Heat large skillet over medium-high heat. Add cooking spray
  4. Cook vegetables for about 2 minutes stirring constantly to prevent burning
  5. Stir in soy sauce and water.
  6. Mix in onion, salt and remaining ginger. Cook until vegetables are tender.
