Crispy Parm Garlic Chicken

4 servings = 2 pts/ serving

1 lbs boneless skinless chicken breast

1/3 cup Progresso Italian style bread crumbs
1/3 cup grated Parmesan cheese + 1 tablespoon (separate)
2 garlic cloves, minced
1 tbsp all-purpose flour

2 medium zucchini, sliced
2 tbsp Fat Free Greek Yogurt

Cooking Spray

  1. In a shallow dish mix together breadcrumbs, 1/3 cup parmesan cheese and flour
  2. Pound out the chicken breasts to desired thickness
  3. Spray large skillet with cooking spray
  4. Coat each of the 4 chicken breasts in ½ tbsp fat free Greek yogurt then coat with the bread crumb mixture and place in heated skillet.
  5. Cook chicken until the outside is crispy and chicken is cooked through, set aside on a plate.
  6. If needed, add a little more cooking spray to the skillet. Add zucchini and sauté until about half cooked. Add garlic and sauté until zucchini is tender.
  7. Add salt and pepper to taste. Sprinkle the remaining 1 tablespoon parmesan cheese over the zucchini.
  8. Add chicken back to skillet and heat until warm.
