Crispy Parm Garlic Chicken
4 servings = 2 pts/ serving1 lbs boneless skinless chicken breast
1/3 cup Progresso Italian style bread crumbs
1/3 cup grated Parmesan cheese + 1 tablespoon (separate)
2 garlic cloves, minced
1 tbsp all-purpose flour
2 medium zucchini, sliced
2 tbsp Fat Free Greek Yogurt
Cooking Spray
- In a shallow dish mix together breadcrumbs, 1/3 cup parmesan cheese and flour
- Pound out the chicken breasts to desired thickness
- Spray large skillet with cooking spray
- Coat each of the 4 chicken breasts in ½ tbsp fat free Greek yogurt then coat with the bread crumb mixture and place in heated skillet.
- Cook chicken until the outside is crispy and chicken is cooked through, set aside on a plate.
- If needed, add a little more cooking spray to the skillet. Add zucchini and sauté until about half cooked. Add garlic and sauté until zucchini is tender.
- Add salt and pepper to taste. Sprinkle the remaining 1 tablespoon parmesan cheese over the zucchini.
- Add chicken back to skillet and heat until warm.
